Summer has arrived and so has our Summer Baking Series! Over the next few weeks we are going to unveil brand new recipes that are sure to impress your friends and family this summer! Starting off with our Lemon Layer Cakes, this recipe is super easy and can be whipped up in no time at all. I used empty jam jars to serve my layer cakes but you can use any jar/glass of your choice!

6. Starting from the edge of the cake using the lid of your jar or cutter, press into the lemon drizzle cake and repeat until you have 12 mini lemon cakes. (Slice in half if you'd rather a thin layer of cake)
7. Chop berries and whip cream
8. Starting from the bottom of your jar, place a layer of lemon drizzle cake, then a tablespoon of cream and some chopped berries. Repeat these steps until your jar is full!
9. Don't forget to sprinkle the crumbs that will be leftover over the cakes at the end!
10. Serve & Enjoy!
