I recently went on a trip to London for some foodie inspiration and to also visit some of my best friends! This recipe is from my wonderful friend Gill, who I stayed with while I was on my trip. It is a simple yet really delicious breakfast/brunch option! It's the perfect option to whip up if you are having friends or family over for brunch and looks really gorgeous plated up 'rustically' on a wooden chopping board.
Avocados and eggs are such a tasty combination, and the addition of crispy parma ham and roasted tomatoes is really, really tasty! You need to try this! Gill served this on sourdough toast, but you can use any sort of loaf you prefer, I think it works best with a white crusty bread!
