These are the perfect breakfast treat or snack to have during the day. The oats and banana make these really satisfying and give a great energy boost, while the little pockets of blueberry burst with flavour and add a lovely sharp contrast. You can add in raspberries or strawberries instead of blueberries if you prefer, and play around with different combinations! The best part is you don’t need to use an electric mixer, so they’re hassle free!
Boutique Bake’s Top Tip: to make a lovely banana topping, place some sliced bananas in a pan with a some butter, a sprinkle of cinnamon and brown sugar, and stir over a low heat until nicely melted and the banana slices are coated.
These oat and seed bars are such a handy snack for when the munchies arrive in the afternoon and you need an energy boost! They are packed full of oats and seeds, with chopped dates added in for some lovely chewiness. I’ve included two recipe options: the super light version, which is made with coconut oil and the more indulgent, with the addition of butter and golden syrup. You can pick whichever option you would prefer, as both are really tasty!
Goji berries are so delicious, but tend to burn very easily, so I’ve simply sprinkled these on top and pressed down, once the bars are baked, to add some colour and extra flavour!
